This Month's Recipe Roasted Peppers A perfect snack, or for part of an antipasta or appetizer... This is an easy one. Getting the skins off is hard. So take your favorite bell pepper, red, yellow or green, or all, and smash them down with your hands. Remove ALL of the seeds and brush the outside with virgin olive oil. Place in an oven at 350F degrees and set them in there until the skins blacken and start to come off. Place in a brown paper bag and let them steam themselves for a while, at least 20 minutes or so. Then the skins will be easier to pull off. Place them in a jar and marinate with a garlic clove, oregano and olive oil. You can later remove the garlic so they do not get too bitter. Soon you will be able to enjoy these as an appetizer with fresh mozzarella and sliced garden tomatoes. |
